TARTARIC ACID E334
E334 tartaric acid is an oenological acidifier.
It is
also used in pharmaceuticals, on confectionery products, for the production of
fruit juices, ice creams, etc.
Tartaric acid is already present in grapes.
It is a regulator of acidity, as a wine with an acid PH protects against bacteria.
By adding tartaric acid, therefore, the acidity of the wine is increased (the
pH level is lowered): this also guarantees greater color stability and greater
aromatic yield during fermentation.
